I am a Christian guy from the U.K, married to and separated from my Israeli wife, who is Jewish. Can we get divorced in Israel, where we both live, or do we have to go to Cyprus, where we married ?

You can get a civil divorce in Israel, without any need to travel to Cyprus. Under the dissolution of marriage process governing mixed religious marriages under Israeli law mutual consent is sufficient grounds to end your marriage.
